Plethora Of Potatoes

We had a PLETHORA of Potatoes    fur just TWO Peeps...
The other day... Mom decided she wanted to make Potato Salad... so she bought a 10# Bag of them...      5 for the Salad   and 5 for Later to do Somethingy with.    OK we came home from the store and put all the stuffs away and then  Ernie and I heard a TRUCK coming up the driveway...  It was our furend Mr. Merle who is our magical MEAT Butchering Guy...    He was returning a 5 GALLON bucket that he had filled up with our tomatoes a week before...        and guess what????
He had that bucket   MOUNDED UP with FRESHLY Dug POTATOES fur mom and dad...   It weighed 35 #'s.        So SUDDENLY all in ONE DAY.... Mom had 45 Pounds of Potatoes...  and it is still TOO Warm fur them to keep long enough fur her to use up... before they Sprout and Spoil.
TALK ABOUT PANIC....   that woman was like US when we See a SQUIRREL in our territory.
She was going WILD...   beclaws our mom NEVER wants ANYTHINGY to go to waste around this hill.
SO she  Pulled out the CANNER and the Jars and she made home Canned Potatoes and potato SOUP.

THIS is the furst Canner load that she got out....     the two jars on the Right are the potato SOUP... there are some Carrots and celery and onions in Those...       and the one on the left is just Potatoes.   They can be used fur FRIED (in BACON GREASE... We hope) Potatoes or fur heating up and making MASHED Potatoes...           Canned Potatoes are like those INSTANT ones... only BETTER.    they are ready in a FLASH when you need them and they taste GRRRRREAT.    PLUS they won't Sprout or Spoil and    THAT makes our mom VERY much Happy...
Mom ended up canning 14 Quarts of those spuds... and she STILL has about 12 #'s of Fresh ones.
Now THAT is how to deal with a PLETHORA of Potatoes.      Baaaaaaawaaaaah.

Hooray for Mom the Canner who never lets things go to waste! My favorite of the things my Mom canned (about a thousand years ago.) was Watermelon Rind pickles. I can still remember how fine they tasted. Does your Mom make watermelon pickles?

YOUr mom is AMAZING! OUr mom can get free potatos from where she works but they give her 50 lb sacks
and they can't use that many up fast enough. If you want to see alot of potatoes, Mom's work makes about 2 MILLION lbs of french fries EVERY DAY!

Holy Dogs, that was a lot of potatoes to take care of. Your Mom is really good for saving them all. NOw you can have them later. I was afraid that you(Frankie Furter) and Ernie would have to start eating them and then you would both get big tummies! Whooooooosh, I am glad it worked out.
