ANZAC Day....

HAPPY    ANZAC   DAY....

The  Ladies of Australia and New Zealand bake these special cookies for ANZAC DAY  (April 25th) Every year...   ANZAC stands for  Australian  New Zealand Army Corp

These cookies were fur sending to their troops serving in times of war.    The cookies do not spoil.   So they could take the LONG journey from the Loving Hands that made them... to their LOVED ONES serving in war zones.
    Miss Tobi (Roxy's Mom) made some ANZAC Cookies and Brought to us... Last April when she was in the States visiting Family and FURENDS like US.    WE thought they were Delicious.
    Miss Tobi sent us the SECRET INGREDIENT ... all the way from Australia.... so our mom could make them fur US.
    Golden Syrup...  is that Secret Ingredient.  
 
 SEE???   it says MADE IN AUSTRALIA right on the bottle...
Now MOM had to TASTE it... and found that it is like MOLASSES...   in both TASTE and Consistency...    So she checked the Intermutts and found that she was RIGHT and that in this country  Molasses CAN be substituted for Australian GOLDEN SYRUP.  
     So here is how the Pawcess went...

Furst Melt the Golden Syrup, Butter, and some water...

 Mix the Dry ingredients together....
 Add the Warm Wet stuffs... and let the mixer WORK...   See the thingy racing around in there???

Then Scooper the dough out and flatten a bit with a fork
 and Pop them in the OVEN
 In about 870 or so..... OUT they Come...  
OMD they smelled SOOOOO good.
    Now there MUST be some FUN Story in this.. RIGHT???   YEP...  there IS.   The Recipes that mom found on the intermutts... ALL said that she had to use    DESICCATED Coconut...  and she could NOT find any of that in the stores...  so she had to THINK which is nearly IMPAWSIBLE fur an ELDERLY lady like SHE is  of how she needed to do that...     Furst she bought Regular Coconut... Put it in the Food PAWcessor to make it sort of FINE...  and then   she Spread it out on a TRAY... to Desiccate  fur TWO DAYS....    BaaaaaaaWaaaaah.  
      SO, TODAY WE HONOR our beloved Australian and New Zealand  ALLIES  who Did and DO serve and protect.         HAPPY     ANZAC DAY            G'DAY and NO WORRIES

a big hug to all the heroes today.... that looks easy to make that anzac cookies... but I bet the mama can make them to an epic fail too :o)

Hmmmmmmm,,,, I know molasses as being BLACK treacle and not the GOLDEN version... but whatever... ANZAC biccies are fabyoulush and are definitely extra special when home made. Hugs and wags, YAM-aunty xxx

Gail and I had the same thought as YAM-Aunty. Surely golden syrup is not the same as molasses? Oh but Gail says there is so much scope for confusion in recipes across the continents, even ones that supposedly speak the same language. And don't even get her started on the notion of 1/2 cup of (unmelted) butter...
Still, looks the the cookies were yummy anyway.

Our mom and dad LOVE ANZACS cookies! Maybe that will be what mom makes when she can finally bake again!

PS: Our mom uses dark corn syrup for the golden syrup.

My Mom's godparents (who were really more like grandparents as her grandparents were all gone by the time she was 4) were from Australia and lived across the street so she grew up with many of their treats. Those cookies look SO good. Mom gets her Australian products (including the syrup for when she makes Damper bread for Dad) from a family run business in OHIO! (You HAVE to get the Tim Tam Cookies). They have the desiccated coconut and they also have Campbells Cream of PUMPKIN soup which Mom uses to make this really good chili with tomatoes and ground steak (and I think she throws in some black beans and a shot of tequila in there). LOVE the coconut bit....great thinking. SHE thought you'd just use that shredded stuff....maybe that's another reason HERs were so hard....bwahaahaa! SHE also just mixes it by hand. Your look VERY pawfessional. A job well done...with its own reward!

You got a KitchenAid Mixer you lucky dogs. We beat everything by hand. If those cookies last and last why they sound like dog biscuits.
